Chinese beef noodle soup is one of my all-time favorite meals. It's the perfect combination of hearty, flavorful, and comforting. And the best part is, it's super easy to find at restaurants or make at home.

Ingredients
  

  • 1 pound beef chuck roast cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 teaspoon red pepper flakes
  • 6 cups beef broth
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • ¼ cup sugar
  • ¼ teaspoon ground black pepper
  • 8 ounces rice noodles
  • 1 cup chopped cilantro
  • ½ cup chopped green onions
  • ¼ cup chopped peanuts

Instructions
 

  • Prepare the beef and broth:
    Start by preparing the beef cuts and bones. If using beef brisket or shank, you may need to blanch them first to remove any impurities.
    Then, simmer the beef and bones in a pot of water for a few hours until the broth becomes rich and flavorful.
  • Add the spices and vegetables:
    Once the broth is ready, add the aromatic spices and let them infuse their flavors into the broth. You can tie the spices in a cheesecloth or use a spice bag for easy removal later.
    Then, add the fresh vegetables and let them cook until they are tender.
  • Cook the noodles:
    While the broth is simmering, cook the noodles separately according to the package instructions. Be sure to cook them al dente, so they don't become too soft in the soup.
    Once cooked, drain the noodles and rinse them with cold water to prevent them from sticking together.
  • Assemble and serve:
    To serve Chinese beef noodle soup, place a portion of noodles in a bowl and ladle the hot broth, beef, and vegetables over the top. Feel free to garnish with additional green onions or cilantro for added freshness. Serve the soup hot and enjoy!

Notes

Fresh or dried noodles? While both work, fresh noodles provide a more delicate and elastic texture. Dried noodles, though easy to store and handy, may require pre-soaking or longer cooking times. Remember, your noodle choice sets the stage for the soup symphony to play out!
