Ingredients
  

  • 8 ounces of cooked pasta preferably rotini or fusilli
  • 1 pound of fresh crab meat you can also use canned if fresh isn't available
  • 1 cup of diced bell peppers red, yellow, and green for added color
  • 1 cup of diced cucumber
  • ½ cup of diced red onion
  • ¼ cup of chopped fresh parsley
  • ¼ cup of chopped fresh dill or cilantro
  • ¼ cup of olive oil
  • ¼ cup of fresh lemon juice
  • 2 tablespoons of Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
  • In a large bowl, combine the crab meat, diced bell peppers, cucumber, red onion, parsley, and dill or cilantro.
  • In a separate small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
  • Pour the dressing over the crab and vegetable mixture and toss gently to coat everything evenly.
  • Add the cooked pasta to the bowl and toss again until all the ingredients are well combined.
  • Taste the salad and adjust the seasoning if needed. Feel free to add more salt, pepper, or lemon juice according to your preference.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  • When you're ready to serve, give the salad one final toss and enjoy it chilled with your family!
