Ingredients
  

  • 1 lb beef sirloin thinly sliced against the grain
  • 1 tbsp olive oil
  • 1 medium onion thinly sliced
  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)
  • Egg noodles or wide egg noodles

Instructions
 

  • Cook the noodles according to package directions. Set aside.
  • Season the beef with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until browned, about 3-4 minutes per side. Remove the beef from the skillet and set aside.
  • Add the onion to the skillet and cook until softened, about 5 minutes. Add the mushrooms and garlic and cook for another 3-5 minutes, until the mushrooms are tender.
  • Sprinkle the flour over the vegetables and cook for 1 minute, stirring constantly. Gradually whisk in the beef broth until smooth.
  • Stir in the sour cream, Dijon mustard, and paprika. Season with salt and pepper to taste. Bring the sauce to a simmer, then reduce heat to low and cook for 5 minutes, or until the sauce has slightly thickened.
  • Return the beef to the skillet and cook for another 2-3 minutes, allowing it to heat through and coat in the sauce.
  • Serve the beef stroganoff over the cooked noodles. Garnish with fresh parsley.
