  • 2 cups chopped kale
  • 1 cup cooked pasta any shape you like
  • ¼ cup sun-dried tomatoes chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoons pine nuts toasted
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Start by washing and drying the kale thoroughly. Remove the tough stems and chop the leaves into bite-sized pieces.
  • Cook the pasta according to the package instructions until al dente. Drain and set aside to cool.
  • In a large mixing bowl, combine the chopped kale, cooked pasta, sun-dried tomatoes, feta cheese, and toasted pine nuts.
  • In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad ingredients.
  • Toss everything together until well combined and evenly coated with the dressing.
  • Let the salad sit for a few minutes to allow the flavors to mingle and the kale to soften slightly.
