Ingredients

  • 1 pound of boneless skinless chicken breasts
  • 1 cup of breadcrumbs preferably panko for an extra crunch
  • ½ cup of grated Parmesan cheese
  • 1 teaspoon of paprika
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • ½ teaspoon of dried oregano
  • ½ teaspoon of dried basil
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 2 large eggs lightly beaten
  • Cooking spray or olive oil for greasing

Instructions

  • Preparing the Chicken: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
Next, cut the chicken breasts into bite-sized pieces, ensuring they are relatively uniform in size. This allows for even cooking and ensures each piece maintains its juiciness.
  • Creating the Coating: In a shallow dish or bowl, combine the breadcrumbs, grated Parmesan cheese, paprika, garlic powder, onion powder, dried oregano, dried basil, salt, and black pepper.
Mix the ingredients thoroughly to ensure an even distribution of flavors.
  • Dipping and Coating: Take each piece of chicken and dip it into the beaten eggs, ensuring it is fully coated. Allow any excess egg to drip off before transferring the chicken into the breadcrumb mixture.
Roll the chicken in the breadcrumbs, pressing gently to ensure they adhere to the surface. Place the coated chicken bites onto the prepared baking sheet, leaving a bit of space between each piece for optimal crispness.
If desired, lightly spray the chicken bites with cooking spray or drizzle olive oil over them for an enhanced golden finish.
  • Baking to Perfection: Slide the baking sheet into the preheated oven and let the magic happen. Bake the chicken bites for approximately 15-18 minutes or until they turn a delicious golden brown.
Remember to flip the chicken bites halfway through the cooking process for even browning on all sides.
  • Serving and Enjoying: Once the chicken bites are cooked to perfection, remove them from the oven and let them cool for a few minutes. This allows the flavors to settle and ensures you won't burn your eager taste buds.
Garnish your creations with a sprinkle of fresh herbs, such as parsley or chives, for an added touch of vibrancy. Serve alongside your favorite dipping sauces, whether it be tangy barbecue, creamy honey mustard, or zesty buffalo sauce.
