Ingredients
  

For the Chicken:

  • ½ teaspoon black pepper
  • Juice of 1 lemon

For the Sandwich:

  • 4 brioche buns or your favorite sandwich rolls
  • 4 slices of cheddar cheese optional, or use your preferred cheese
  • Lettuce leaves romaine or butter lettuce work well
  • 1 large tomato sliced
  • 1 red onion thinly sliced
  • 4 tablespoons mayonnaise or aioli, for extra flavor
  • 2 tablespoons Dijon mustard optional

Instructions
 

  • Marinate the Chicken: In a bowl, whisk together olive oil, garlic powder, smoked paprika, oregano, onion powder, salt, pepper, and lemon juice to create a marinade. Coat the chicken breasts in the marinade, ensuring they’re evenly covered. Let them marinate for at least 30 minutes, or up to 2 hours in the fridge for maximum flavor.
  • Grill the Chicken: Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grates to prevent sticking. Place the marinated chicken breasts on the grill and cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C). Avoid overcooking to keep the chicken juicy. If you're using cheese, add a slice to each chicken breast during the last minute of grilling and close the grill lid to let it melt.
  • Prep the Buns: While the chicken is grilling, lightly toast the brioche buns on the grill for about 1-2 minutes, until golden and slightly crispy.
  • Assemble the Sandwich: Spread 1 tablespoon of mayonnaise (or aioli) on the bottom half of each bun. Add Dijon mustard if you like an extra tangy kick. Layer the lettuce, grilled chicken (with melted cheese, if using), tomato slices, and red onion. Top with the other half of the bun.
