- 1 tablespoon olive oil
- 1 medium yellow onion diced
- 2 garlic cloves minced
- 2 carrots chopped
- 2 celery stalks chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- 1 cup dried brown or green lentils rinsed
- 1 can 14.5 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup water optional for thinning
- Salt and black pepper to taste
- Juice of ½ lemon for brightness
- Fresh parsley or cilantro for garnish optional
Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the onion and cook for about 3 minutes until translucent. Stir in garlic, carrots, and celery. Sauté for another 5 minutes until softened.
Add Spices and Lentils: Sprinkle in cumin, smoked paprika, and thyme. Stir for 30 seconds to release the aroma, then add the rinsed lentils, diced tomatoes, and vegetable broth. Add a cup of water if you like a thinner soup.
Simmer the Soup: Bring to a boil, then reduce the heat to low. Cover and simmer for 20–25 minutes, or until lentils are tender. Stir occasionally.
Blend (Optional): For a creamier texture, blend half the soup using an immersion blender or transfer some to a blender and return it to the pot.
Finish and Serve: Stir in lemon juice and season with salt and pepper to taste. Garnish with fresh herbs and serve hot with crusty bread.
